Homemade Taco Seasoning
It was another one of “those” nights. You know the kind. It was the kind of night where you know you should be cooking for your family, or cleaning something or organizing something or doing anything worth while. Instead of working on the greeat American novel or making blankets and knitting socks for refugees… you’re sitting on your butt doing something mind numbing (like catching up on brain rotting fodder on Hulu). In my own defense… hmmm, it just occurs to me… I have no defense. Ugh.
Anyhow, dinner time was upon me as it is every night at the same time. For crying out loud dinner time… sing another song! Mike was hungry, I was hungry, commissary shopping got pushed to tomorrow and so…Taco-Rice and Cheese to the rescue.
For those of you who don’t or have never lived in Okinawa, Taco-Rice and Cheese is a very complex dish out here consisting of Taco meat, rice and cheese. It is a deconstructed taco on some rice if you will. Tasty stuff and OH. SO. EASY.
Just so I don’t feel like a total work shirking slug today…I made up a fresh batch of Taco Seasoning. It’s good and it too is easy. Smelling the taco meat do its thang makes me hopeful for tomorrows dinner time. I’m not sure why… it just does. So here is the recipe and a little beam of hope for tomorrow. Didn’t know all that could come in a spice mix did you?
