Honey Yeast Rolls

My daughter Jess and I love bread… totally, love bread. I mean, we love it. Lisa and Jess + Bread=Love. The smell, the texture, the taste, the sop-ability the versatility and the yum factor make it the perfect food. When we discovered that in the military prison they sometimes put the inmates on “bread and water” rations. Jess and I were instantly envious and wondered how we could get in such a happy place where bread is doled out as a main course. Of course we then realized that it probably wasn’t delicious bread and so we abandoned that whole track.

You don’t have to commit any felonies in order to get bread. Make some for yourself. Why not start with this recipe for… OH! SO! DELICIOUS! Honey Yeast Rolls? They are pillowy soft, yeasty and delicious. They are brushed with honey butter before baking and that little bite of subtle sweetness on the crust sends them over the top!

Have you seen the movie “Despicable Me” yet? Do you remember the scene in which the little girl wins the unicorn at the fair? Remember the way she happily cried upon receiving her prize unicorn, “It’s so FLUFFY” ? Well, that’s exactly what I said when I took my first bite of these babies!

 They’re pretty easy to make too which makes them my new favorite thing to cook.

The directions call for a stand mixer but I used my bread machine on the dough cycle to mix and knead the dough then when it was done rising I formed the rolls and popped them into a baking dish. If you don’t have a stand mixer or a bread machine… not to worry… just knead away. I must warn you, however, that the “easy” portion of the recipe just got a little less so. Though, it will still be easy… just a little more knead time will be added. 

Make them today, take a bite and… what did I tell you… FLUFFY!

Honey Yeast Rolls

Honey Yeast Rolls

Makes 10-12 rolls

The Ingredients

  • 2¼ tsp. instant yeast
  • 1 cup warm water (105-115˚ F)
  • 
¼ cup honey
  • 
3 tbsp. canola oil
  • 
1¼ tsp. salt
  • 
1 egg, lightly beaten
  • 4 cups bread flour
  • Vegetable cooking spray
  • 
2 tbsp. butter, melted
  • 2 tbsp. honey

The Instructions

  1. In the bowl of an electric mixer fitted with the paddle attachment, {See Note} combine the yeast and warm water.
  2. Add the honey, oil, salt, and egg and mix well.
  3. Add 3 cups of the flour and mix until the dough comes together in a sticky mass.
  4. Switch to the dough hook and, with the mixer on low speed, incorporate the remaining 1 cup of flour.
  5. Continue kneading on low speed for about 8 minutes, until the dough is smooth and elastic.
  6. ***Note: If you're doing this all by hand... first of all, I salute you... tough pioneer chick... next after receiving the salute you will want to flour your work surface and then get to kneading. It will be all sticky at first (and for a good long while during) but you will knead until the dough is smooth and elastic (maybe about 10-15 minutes).
  7. Transfer to a lightly oiled bowl, turn once to coat, and cover with plastic wrap. Let rise in a warm, draft-free spot until doubled in bulk, about 2 hours.
  8. Turn the dough out onto a lightly floured work surface and knead for 30 seconds. Cover with a towel and let rest for 10 minutes.
  9. Punch the dough down and divide into 10-12 equal size pieces. Shape each piece into a smooth ball and place into a round, lightly greased 9- or 10-inch baking dish or into a 9x13 rectangular baking dish, spacing evenly. Cover and let rise in a warm, draft-free spot for 20-30 minutes.

Preheat the oven to 400˚ F.
  10. Mix together the melted butter and honey, and brush the tops of the rolls with the mixture. Bake for 15-20 minutes, or until the tops are golden brown and the rolls are baked through.
