
Cowboy Beans
These beans are a house favorite. Every now and again we have a “cowboy” themed dinner that is very popular with the Marines. I usually serve a smoked brisket, corn bread, and these beans. They love them. The first time I made them Mike was my assistant chef in the kitchen, now he is the one that usually makes these when they are on the menu… not sure why, but spicy beans are a “Guy” dish. Hahaha. Anyhow, these are easy to make, feed a crowd, meaty, spicy and just down right tasty.

Cowboy Beans
Serves a crowd
The Ingredients
- 1 pound ground beef
- 1 pound chorizo
- 1 TBS chili powder (New Mexican if you can get it)
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 1 gallon ranch style beans
- 2 cups brown sugar
- 1 cup barbecue sauce (hickory smoked)
- 1/2 cup jarred jalapenos, chopped
- salt and pepper to taste
The Instructions
- Brown the meat and chorizo in a skillet. Drain, reserving 1 tablespoon of fat.
- Add the reserved fat to a stock pot and over medium-high heat, cook the onions and bell peppers until soft.
- Return the meat to the pan and add the beans, and remaining ingredients. Lower heat to medium-low.
- Simmer for about 30 minutes.
