Churro Popcorn

February 19, 2012

A few months ago we had a baby girl baby shower.  The theme was Ruffles and Bows and Sugar n’ Spice.  Everything was pink and ruffly and sweet.  On our Sugar N’ Spice themed dessert table we had lots of yummy treats but one of my favorites was this Churro popcorn.  I loved the sugary sweet bites of cinnamon spiced popcorn.  I thought you might enjoy it too along with a couple of photos of the event.

Oh and by the way, after some research I found a good air popcorn popper on Amazon for under 20 bucks.  It’s a great way to pop popcorn without any added fat or all the bad stuff that microwave popcorn has in it.  Click here for the link.

Making a pink ruffle cake.

Our table decor: We made fresh Raspberry Lemonade and rimmed our glasses in pink sugar.  It was pretty tasty.

This is Bella.  She is the big sister of Charlotte Rose who arrived shortly after the shower.  Bella is our living doll and every girly party needs a doll.  :)

Churro Popcorn

Makes a good sized bowl.

The Ingredients

  • 1/2cup unpopped popcorn
  • 1/3 cup butter
  • 2/3 cup white sugar
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract

The Instructions

  1. Preheat an oven to 250 degrees F (120 degrees C). Pop the popcorn using an air popper according to manufacturer's directions. Place into a large mixing bowl, and set aside.
  2. Melt the butter in a small saucepan over medium heat. Stir in the sugar, cinnamon, salt, and vanilla, and cook until thick and bubbly. Pour over the popcorn, and stir until the popcorn is evenly coated. Spread the popcorn into a large roasting pan. (my note: there will be some heavier clusters of cinnamon-sugar...those will be the first bites to get picked over!)
  3. Bake in the preheated oven 10 minutes, then turn the heat off, and allow the popcorn to stay in the oven 20 minutes longer. Remove from oven, and cool completely before serving.
