
Fluffy Chocolate Frosting
The midweek Bible study was upon me again and I needed a dessert for a crowd. I had planned on making these outrageous brownies but earlier in the day (through the social media marvel that is facebook) I learned that one of our new regulars was having a birthday.
Birthday cake it is! I think that yellow cake with chocolate frosting is so homey and happy and welcoming and birthday cakey so that’s what I made. In the file was this recipe for a yummy chocolate frosting that promised to be fluffy and decadent… and easy. Sold!
It’s from the good people at Cook’s Country Magazine so I knew it would be delicious. I trust every recipe they print.
Everyone loved it… even though our “birthday boy” didn’t make the study. It must have been a good cake as I got asked this question more than once “Paul isn’t here? Can I have his piece?” :)
You can just see from this photo how fluffy and billowy it is. It’s almost like mousse. Mmmm, mousseeeee.
Fluffy Chocolate Frosting
Makes 4 cups of frosting
The Ingredients
- 20 TBS unsalted butter (2 1/2 sticks), cut into pieces and softened
- 3 TBS heavy cream
- 2 1/2 tsp vanilla
- 1/4 tsp
- 8ounces semi sweet chocolate, melted and cooled
- 3 cups powdered sugar, sifted
- 3 TBS cocoa powder
The Instructions
- In an electric mixer fitted with whisk attachment, beat butter, cream, vanilla, salt, and chocolate on medium-high speed until combined (can also use a hand mixer)
- Reduce mixer speed to medium-low. With motor running, slowly add confectioners' sugar and cocoa and mix until smooth, 1 to 2 minutes. Increase speed to medium-high and beat frosting until light and fluffy, about 5 minutes.
